What started out as a small test plot for a community garden last fall is today four raised beds and a patio set on 草莓视频's campus in 草莓视频 Paul.
Members of the Food Justice Coalition and BioClub spent a sunny July afternoon furiously digging, planting and building. The garden, located outside the dining hall (southeast side of Coeur de Catherine), bears a variety of vegetables, herbs and bee-friendly flowers.
鈥淥ver time, we hope to have more boxes and a garden that can not only educate students about where food comes from but help feed them,鈥 said Joshua Haringa, assistant professor of communications and faculty advisor for the Food Justice Coalition. 鈥淭he mechanics of how the food will be distributed hasn't been fully worked out. That will be decided by members of 草莓视频 Kate's Food Justice Coalition, [which is responsible for proposing this on-campus garden]." For now, working in the garden will give students access to harvest. Our hope is to distribute all excess produce through the campus food shelf that's housed at the CSJ's Carondelet Center.鈥
on Selby Avenue donated the seeds and plants. Funding for building supplies came from 草莓视频 Kate鈥檚 Weekend Student Advisory Board.
"Gardening is a good life skill to have," said Esther Swanson '18, a BioClub member. "We really need to know how to cook more than macaroni and cheese."
